This is an open access book. The Higher Colleges of Technology’s General Studies Division, and the HCT-Dubai Women’s campus, hosted the HCT International General Education Conference (online edition) on October 5, 2022, under the theme of Practice and Pedagogy in General Education. General Education, in today’s hyper-connected and virtual world, plays a vital role in providing students with a range of opportunities to develop their abilities to think critically and creatively. This, in turn, fosters an innovative mindset, enriching students’ understanding of the wider social and cultural contexts in which they will live and work. Hence, the discipline of General Education provides students with much-needed breadth and depth of knowledge – from developing mathematical skills to raising awareness of sustainability issues and improving communication skills. The conference organizing committee welcomes higher education scholars, researchers and teachers from around the world to participate in the online, free-of-charge conference, by sharing teaching and learning best practices and techniques, pedagogical delivery and enhancement, current research endeavors and the optimization of student learning and engagement, in an inclusive and collaborative environment that promotes knowledge sharing and exchange, as well as networking and camaraderie. Educators and researchers from across the different academic disciplines within the field of General Education are welcome to attend and share their insights, experiences and expertise to ensure a rich and productive discussion.

Abstract: A diet manual incorporating current diet therapy concepts and recent research on nutritional management is presented for use by medical and dietary personnel in health care facilities. Therapeutic and special diets are arranged in 8 tabulated sections: standard hospital diets; pediatric nutrition; modified consistency and gastrointestinal diets; calorie, protein, fat, and sodium controlled diets; and miscellaneous and test diets. Diets reflect revised recommendations of the American Diabetes and Heart Associations where applicable, and meet RDAs unless otherwise noted. A physician's guide facilitates the ordering of diets for specific diseases. Cooperation between physician and dietitian is encouraged to optimize nutritional care of the patient. A diet as tolerated policy, rather than rigid food restrictions, is recommended. Appendices provide supplementary information on weight-for-height, weights and measures, nutrients, food composition, and sodium, potassium, magnesium, and caffeine content of foods and beverages. As computing devices grow more ubiquitous, a larger part of our lives and work is recorded digitally, and as “Big Data” has gotten bigger, the theory of machine learning—the foundation of efforts to process that data into knowledge—has also advanced. First published in 1987, this book provides a stimulating introduction to artificial intelligence (AI) - the science of thinking machines. After a general introduction to AI, including its history, tools, research methods, and its relation to psychology, Garnham gives an account of AI research in five major areas: knowledge representation, vision, thinking and reasoning, language, and learning. He then describes the more important applications of AI and discusses the broader philosophical issues raised by the possibility of thinking machines. In the final chapter, he speculates about future research in AI, and more generally in cognitive science. Suitable for psychology students, the book also provides useful background reading for courses on vision, thinking and reasoning, language and learning.

Originally published in 1987 when Artificial Intelligence (AI) was one of the most hotly debated subjects of the moment; there was widespread feeling that it was a field whose ‘time had come’, that intelligent machines lay ‘just around the corner’. Moreover, with the onset of the revolution in information technology and the proclamation from all corners that we were moving into an ‘information society’, developments in AI and advanced computing were seen in many countries as having both strategic and economic importance. Yet, aside from the glare of publicity that tends to surround new scientific ideas or technologies, it must be remembered that AI was a relative newcomer among the sciences; that it had often been the subject of bitter controversy; and that though it had been promising to create intelligent machines for some 40 years prior to publication, many believe that it had actually displayed very little substantive progress. With this background in mind, the aim of this collection of essays was to take a novel look at AI. Rather than following the path of old well-trodden arguments about definitions of intelligence or the status of computer chess programs, the objective was to bring new perspectives to the subject in order to present it in a different light. Indeed, instead of simply adding to the endless wrangling ‘for’ and ‘against’ AI, the source of such divisions is made a topic for analysis in its own right. Drawing on ideas from the philosophy and sociology of scientific knowledge, this collection therefore broke new ground. Moreover, although a great deal had been written about the social and cultural impact of AI, little had been said of the culture of AI scientists themselves – including their discourse and style of thought, as well as the choices, judgements, negotiations and competitive struggles for resources that had shaped the genesis and development of the paradigmatic structure of their discipline at the time. Yet, sociologists of science have demonstrated that the analysis of factors such as these is a necessary part of understanding the development of scientific knowledge. Hence, it was hoped that this collection would help to redress the imbalance and provide a broader and more interesting picture of AI.
