Synopsis Milk and Cream Testing and Grading Dairy Products for School, Farm, and Factory (Classic Reprint) by : G. Sutherland Thomson
Excerpt from Milk and Cream Testing and Grading Dairy Products for School, Farm, and Factory The arts of making butter and cheese were followed in the earliest ages of which we have any record, and it is not unreasonable to assume that they were known to primitive and perhaps to prehistoric man. In what part of the world they were first acquired or among what race of people they were first practised is not known. The only indications we have regarding the time when they originated are the natural deductions that it was not before the era when primitive man began to domesticate the wild animals, and that it would be among a pastoral race, but whether among a nomadic or a stationary people is unknown. There are reasons for supposing that these handicrafts originated in the East, and that the first animals used for supplying man with milk were sheep or goats. The domestication of cattle would be much more difficult than that of sheep or goats, so that it is very probable the utilisation of the cow for milking did not take place until a much later period.
