Insect protein production through ‘mini-livestock farming’ has enormous potential to reduce the level of malnutrition in critical areas across the world. It has been estimated that insect eating is practised regularly by over two billion people, mostly in China and in most tropical countries in Africa, South America, and Asia. However, eating insects has been taboo in many western nations. Reasons for this are discussed in this book with examples from Finland and the UK. The enormous boom of insect farming in Finland started in September 2017 when the business type was legalized. However, a large part of the population found the insect food too expensive and exotic. UK research outlines a multitude of promising strategies to overcome ‘western’ resistance to eating insects. This book also includes a chapter on the potential of insect farming to increase global food security. It shows that Africa is a hotspot of edible insect biodiversity and there more than 500 species consumed daily. We have several examples of viable insect farming businesses that can fight poverty and malnutrition in developing countries and provide profit and wealth to rural farmers. The chapters of the book cover countries such as Cameroon, Ecuador, Finland, Ghana, India, Mexico, the UK, and the US.

Food safety is a keystone to agrifood systems and all food safety actors need to keep pace with the ongoing transformation while preparing to navigate the potential threats, disruptions, and challenges that may arise. Foresight in food safety facilitates the proactive identification of drivers and related trends, both within and outside agrifood systems, that have implications for food safety and therefore also for consumer health, the national economy, and international trade. Early identification and evaluation of drivers and trends promote strategic planning and preparedness to take advantage of emerging opportunities and address challenges in food safety. In this publication, the FAO Food Safety Foresight programme provides an overview of the major global drivers and trends by describing their implications for food safety in particular and for agrifood systems by extrapolation. Agrifood systems require sustained growth to maintain food security for the global population, while facing unprecedented pressure from challenges of climate change and resource depletion. In this context, evaluating, holistically planning and transitioning to circularity will be critical to improve sustainability and face those challenges. While circular economy initiatives offer considerable promise in improving sustainability and increasing performance, these benefits are juxtaposed by the increasing evidence that contaminants, physical, microbiological or chemical, can get introduced, persist and potentially lead to unsafe food. Therefore, protecting food safety is key for the success of transitioning our current linear agrifood system to a more sustainable and circular one. This report provides a synthesis of current and emerging evidence of food safety risks in circular agrifood initiatives, with an aim to understand challenges and opportunities to manage and enhance food safety.
