An understanding of food demand and food trends across countries and the ability to predict potential shifts in demand for different food products is an invaluable tool for all individuals involved in the agricultural sector. In a 2003 report, International Evidence on Food Consumption Patterns, ERS and collaborating economists estimated income and price elasticities of demand for broad consumption categoriessuch as food, clothing, education, and other goodsand for food categories such as cereals, meats, and dairy across 114 countries using 1996 International Comparison Program (ICP) data. These elasticities measure the degree to which consumption changes when prices or incomes change. This book provides an update on the International Evidence on Food Consumption Patterns using the 2005 International Date Program Data; and discusses global drivers of agricultural demand and supply.

Globalization of the food supply has created conditions favorable for the emergence, reemergence, and spread of food-borne pathogens-compounding the challenge of anticipating, detecting, and effectively responding to food-borne threats to health. In the United States, food-borne agents affect 1 out of 6 individuals and cause approximately 48 million illnesses, 128,000 hospitalizations, and 3,000 deaths each year. This figure likely represents just the tip of the iceberg, because it fails to account for the broad array of food-borne illnesses or for their wide-ranging repercussions for consumers, government, and the food industry-both domestically and internationally. A One Health approach to food safety may hold the promise of harnessing and integrating the expertise and resources from across the spectrum of multiple health domains including the human and veterinary medical and plant pathology communities with those of the wildlife and aquatic health and ecology communities. The IOM's Forum on Microbial Threats hosted a public workshop on December 13 and 14, 2011 that examined issues critical to the protection of the nation's food supply. The workshop explored existing knowledge and unanswered questions on the nature and extent of food-borne threats to health. Participants discussed the globalization of the U.S. food supply and the burden of illness associated with foodborne threats to health; considered the spectrum of food-borne threats as well as illustrative case studies; reviewed existing research, policies, and practices to prevent and mitigate foodborne threats; and, identified opportunities to reduce future threats to the nation's food supply through the use of a "One Health" approach to food safety. The Agricultural Outlook 2021-2030 is a collaborative effort of the Organisation for Economic Co-operation and Development (OECD) and the Food and Agriculture Organization (FAO) of the United Nations. It brings together the commodity, policy and country expertise of both organisations as well as input from collaborating member countries to provide an annual assessment of the prospects for the coming decade of national, regional and global agricultural commodity markets. The publication consists of 11 Chapters; Chapter 1 covers agricultural and food markets; Chapter 2 provides regional outlooks and the remaining chapters are dedicated to individual commodities.

The world food situation is currently being rapidly redefined by new driving forces. Income growth, climate change, high energy prices, globalization, and urbanization are transforming food consumption, production, and markets. The influence of the private sector in the world food system, especially the leverage of food retailers, is also rapidly increasing. Changes in food availability, rising commodity prices, and new producer-consumer linkages have crucial implications for the livelihoods of poor and food-insecure people. Analyzing and interpreting recent trends and emerging challenges in the world food situation is essential in order to provide policymakers with the necessary information to mobilize adequate responses at the local, national, regional, and international levels. It is also critical for helping to appropriately adjust research agendas in agriculture, nutrition, and health. Not surprisingly, renewed global attention is being given to the role of agriculture and food in development policy, as can be seen from the World Bank's World Development Report, accelerated public action in African agriculture under the New Partnership for Africa's Development (NEPAD), and the Asian Development Bank's recent initiatives for more investment in agriculture, to name just a few examples.

This report develops three contrasting scenarios to illustrate alternative futures, based on several global economic models and extensive stakeholder discussions, and outlines policy considerations to help ensure that future needs are met sustainably.

One of the major knowledge challenges in the domain of Resilient and Sustainable Food Systems refers to the integration of perspectives on consumption, patterns that support public health, inclusive value chains, and environmentally sustainable food production. While there is a long record of the analysis of separate interventions, this special issue generates integrated insights, provides cross-cutting perspectives, and outlines practical and policy solutions that address these global challenges.The collection of papers promotes the view that sustainable food systems require thorough insights into the structure and dynamics of agri-food production systems, the drivers for integrating food value chains and markets, and key incentives for supporting healthier consumer choices. On the production side, potential linkages between agricultural commercialization and intensification and their effects for food security and nutritional outcomes are analyzed. Value Chains are assessed for their contribution to improving exchange networks and markets for food products that simultaneously support efficiency, circularity, and responsiveness. Individual motives and market structures for food consumption need to be understood in order to be able to outline suitable incentives to enhance healthy dietary choice.The contributed papers focus on interfaces between food system activities and processes of adaptive change that are critical for overcoming key constraints and trade-offs between sustainable food and healthy diets.

Ensuring optimal diets and nutrition for the global population is a grand challenge fraught with many contentious issues. To achieve food security for all and protect health, we need functional, equitable, and sustainable food systems. Food systems are highly complex networks of individuals and institutions that depend on governance and policy leadership. This book explains how interconnected food systems and policies affect diets and nutrition in high-, middle-, and low-income countries. In tandem with food policy, food systems determine the availability, affordability, and nutritional quality of the food supply, which influences the diets that people are willing and able to consume. Readers will become familiar with both domestic and international food policy processes and actors, and they will be able to critically analyze and debate how policy and science affect diet and nutrition outcomes.
