The untold story of America's wholesale food business. In nineteenth-century America, municipal deregulation of the butcher trade and state-incorporated market companies gave rise to a flourishing wholesale trade. In Movable Markets, Helen Tangires describes the evolution of the American wholesale marketplace for fresh food, from its development as a bustling produce district in the heart of the city to its current indiscernible place in food industrial parks on the urban periphery. Tangires follows the middlemen, those intermediaries who became functional necessities as the railroads accelerated the process of delivering perishable food to the city. Tracing their rise and decline in the wake of a deregulated food economy, she asks: How did these people, who occupied such key roles as food distributors and suppliers to the retail trade, end up exiled to urban outskirts? From the 1770s the Vienna bread market was rocked by a series of politico-economic and technological changes that questioned the way this everyday foodstuff was sold and produced. In this book, Jonas Albrecht explores how this reconfiguration of the bread market had wide-reaching and significant consequences for a society who relied on this foodstuff to live. Before 1860 the production and selling of bread was embedded into a moral economy with distinct regulations. But as the grain market expanded and new cereal varieties arrived from the empire's peripheries reformers sought to create a 'free' market through liberalizing reforms. The Moral and Market Economies of Bread shows that while terminating market regulation did mobilize and diversify Vienna's bread market in spatial terms, it intensified inequality among consumers. As opaque prices, non-transparent market procedures and diverging power relations between producers and consumers led to unrest, city officials and bakers struggled to meet the shortcomings of the free market from within. This book brings economic, social and urban histories together and employs a spatial approach and GIS methods to explore the relationship between market and society, and capitalism at large.

Since the mid-1990s, the term 'foodscapes' has been used. Its reference to landscape opens it up to a wide theoretical variety and numerous methodological approaches. Through the large 'semantic yard' of the concept of landscape it becomes clear that the approach of foodscapes aims less at the description or pure positivistic analysis of the production, distribution and consumption of food, but is rather open to aesthetic approaches, normative questions, aspects of the connection of food and space with meaning. In this respect, research on foodscapes is not simply a part of food geography but reaches beyond it. With this anthology we contribute to the development of the research field on foodscapes and combine diverse perspectives from different disciplines, locations and theoretical as well as methodological backgrounds on the diversity of what foodscapes can be. Our anthology 'Foodscapes - Theory, History, and Current European Examples' is the result of the collaboration of lecturers and students from the universities of Bucharest, Madrid, Rome and Tübingen.

Spain's development from a premodern society into a modern unified nation-state with an integrated economy was painfully slow and varied widely by region. Economic historians have long argued that high internal transportation costs limited domestic market integration, while at the same time the Castilian capital city of Madrid drew resources from surrounding Spanish regions as it pursued its quest for centralization. According to this view, powerful Madrid thwarted trade over large geographic distances by destroying an integrated network of manufacturing towns in the Spanish interior. Challenging this long-held view, Regina Grafe argues that decentralization, not a strong and powerful Madrid, is to blame for Spain's slow march to modernity. Through a groundbreaking analysis of the market for bacalao--dried and salted codfish that was a transatlantic commodity and staple food during this period--Grafe shows how peripheral historic territories and powerful interior towns obstructed Spain's economic development through jurisdictional obstacles to trade, which exacerbated already high transport costs. She reveals how the early phases of globalization made these regions much more externally focused, and how coastal elites that were engaged in trade outside Spain sought to sustain their positions of power in relation to Madrid. Distant Tyranny offers a needed reassessment of the haphazard and regionally diverse process of state formation and market integration in early modern Spain, showing how local and regional agency paradoxically led to legitimate governance but economic backwardness.

This is the first scholarly treatment of the history of public eating in London in the Victorian and Edwardian eras. The quotidian nature of eating out during the working day or evening should not be allowed to obscure the significance of the restaurant (defined broadly, to encompass not merely the prestigious West End restaurant, but also the modest refreshment room, and even the street cart) as a critical component in the creation of modern metropolitan culture. The story of the London restaurant between the 1840s and the First World War serves as an exemplary site for mapping the expansion of commercial leisure, the increasing significance of the service sector, the introduction of technology, the democratization of the public sphere, changing gender roles, and the impact of immigration. The London Restaurant incorporates the notion of 'gastro-cosmopolitanism' to highlight the existence of a diverse culture in London in this period that requires us to think, not merely beyond the nation, but beyond empire. The restaurant also had an important role in contemporary debates about public health and the (sometimes conflicting, but no less often complementary) prerogatives of commerce, moral improvement, and liberal governance. The London Restaurant considers the restaurant as a business and a place of employment, as well as an important site for the emergence of new forms of metropolitan experience and identity. While focused on London, it illustrates the complex ways in which cultural and commercial forces were intertwined in modern Britain, and demonstrates the rewards of writing histories which recognize the interplay between broad, global forces and highly localized spaces.

After Hurricane Katrina in 2005, many high-profile chefs in New Orleans pledged to help their city rebound from the flooding. Several formed their own charitable organizations, including the John Besh Foundation, to help revitalize the region and its restaurant scene. A year and a half after the disaster when the total number of open restaurants eclipsed the pre-Katrina count, it was embraced as a sign that the city itself had survived, and these chefs arguably became the de facto heroes of the city's recovery. Meanwhile, food justice organizations tried to tap into the city's legendary food culture to fundraise, marketing high-end dining events that centered these celebrity chefs. Jeanne K. Firth documents the growth of celebrity humanitarianism, viewing the phenomenon through the lens of feminist ethnography to understand how elite philanthropy is raced, classed, and gendered. Firth finds that cultures of sexism in the restaurant industry also infuse chef-led philanthropic initiatives.
