It is widely known that food markets have a high environmental impact, which needs to be minimized in order to help mitigate climate change. Governments and international institutions can help improve the sustainability of global food production; however, consumers’ decisions have an important role in influencing food market stakeholders’ choices towards sustainable food sources and low-emission practices. Understanding consumers' awareness of the importance of choosing sustainable diets and their capability to adapt their individual decision-making, is pivotal to stimulating or improving consumers’ willingness to move towards choosing climate-friendly food and avoiding food waste. There are many factors that influence people’s food choices from cultural and ethical acceptability, visual attractiveness, taste agreeability, and economic affordability, which change depending on the geographical areas and targeted group of people. Thus, to orient consumers’ food choices many challenges need to be considered, including making consumers aware of organic food health and environmental benefits, nutritional high protein alternatives to meat, and offering affordable solutions. The aim of this Research Topic is to collect different perspectives on consumers’ food choices in relation to the environmental sustainability issue. This would support the decision-makers and food systems stakeholders to move towards sustainable food production. Thus, this collection wishes to highlight the consumers’ point of view on the trade-off between personal habits and food preferences, and climate-friendly choices in geographical areas, including the awareness of the impact that the diet choice may have on the environment. This collection welcomes submissions on the following themes, but are not limited to: • Consumers' perception of the diet’s impact on climate change issue • Consumers' food choice drivers • Cultural acceptability of alternative protein sources • Consumers’ willingness to purchase organic food • Trade-off availability between sustainable and affordable food choice

Considering the detrimental environmental impact of current food systems, and the concerns raised about their sustainability, there is an urgent need to promote diets that are healthy and have low environmental impacts. These diets also need to be socio-culturally acceptable and economically accessible for all. Acknowledging the existence of diverging views on the concepts of sustainable diets and healthy diets, countries have requested guidance from the Food and Agriculture Organization of the United Nations (FAO) and the World Health Organization (WHO) on what constitutes sustainable healthy diets. These guiding principles take a holistic approach to diets; they consider international nutrition recommendations; the environmental cost of food production and consumption; and the adaptability to local social, cultural and economic contexts. This publication aims to support the efforts of countries as they work to transform food systems to deliver on sustainable healthy diets, contributing to the achievement of the SDGs at country level, especially Goals 1 (No Poverty), 2 (Zero Hunger), 3 (Good Health and Well-Being), 4 (Quality Education), 5 (Gender Equality) and 12 (Responsible Consumption and Production) and 13 (Climate Action).

Cultures of Sustainability and Wellbeing: Theories, Histories and Policies examines and assesses the interdependence between sustainability and wellbeing by drawing attention to humans as producers and consumers in a post-human age. Why wellbeing ought to be regarded as essential to sustainable development is explored first from multifocal theoretical perspectives encompassing sociology, literary criticism and socioeconomics, second in relation to institutions and policies, and third with a focus on specific case studies across the world. Wellbeing and its sustainability are defined in terms of biological and cultural diversity; stages of advancement in science and technology; notions of citizenship and agency; geopolitical scenarios and environmental conditions. Wellbeing and sustainability call for enquiries into human capacities in ontological, epistemological and practical terms. A view of sustainability that revolves around material and immaterial wellbeing is based on the assumption that life quality, comfort, happiness, security, safety always posit humans as both recipients and agents. Risk and resilience in contemporary societies define the intrinsically human ability to make and consume, to act and adapt, driving the search for and fruition of wellbeing. How to sustain the dual process of exploitation and regeneration is a task that requires integrated approaches from the sciences and the humanities, jointly tracing a worldwide cartography with clear localisations. This book will be of great interest to students and researchers interested in sustainability through conceptual and empirical approaches including social theory, literary and cultural studies, environmental economics and human ecology, urbanism and cultural geography.

One of the many benefits of the U.S. food system is a safe, nutritious, and consistent food supply. However, the same system also places significant strain on land, water, air, and other natural resources. A better understanding of the food-environment synergies and trade-offs associated with the U.S. food system would help to reduce this strain. Many experts would like to use that knowledge to develop dietary recommendations on the basis of environmental as well as nutritional considerations. But identifying and quantifying those synergies and trade-offs, let alone acting on them, is a challenge in and of itself. The difficulty stems in part from the reality that experts in the fields of nutrition, agricultural science, and natural resource use often do not regularly collaborate with each other, with the exception of some international efforts. "Sustainable Diets" is the summary of a workshop convened by The Institute of Medicine's Food Forum and Roundtable on Environmental Health Sciences, Research, and Medicine in May 2013 to engender dialogue between experts in nutrition and experts in agriculture and natural resource sustainability and to explore current and emerging knowledge on the food and nutrition policy implications of the increasing environmental constraints on the food system. Experts explored the relationship between human health and the environment, including the identification and quantification of the synergies and trade-offs of their impact. This report explores the role of the food price environment and how environmental sustainability can be incorporated into dietary guidance and considers research priorities, policy implications, and drivers of consumer behaviors that will enable sustainable food choices.

Greenhouse gas emissions by the livestock sector could be cut by as much as 30 percent through the wider use of existing best practices and technologies. FAO conducted a detailed analysis of GHG emissions at multiple stages of various livestock supply chains, including the production and transport of animal feed, on-farm energy use, emissions from animal digestion and manure decay, as well as the post-slaughter transport, refrigeration and packaging of animal products. This report represents the most comprehensive estimate made to-date of livestocks contribution to global warming as well as the sectors potential to help tackle the problem. This comprehensive overview of local food systems explores alternative definitions of local food, estimates market size and reach, describes the characteristics of local consumers and producers, and examines early indications of the economic and health impacts of local food systems. Defining ¿local¿ based on marketing arrangements, such as farmers selling directly to consumers at regional farmers¿ markets or to schools, is well recognized. Statistics suggest that local food markets account for a small, but growing, share of U.S. agricultural production.
