These old fashioned recipes were originally made using beef, chicken, pork, fish, lard, eggs and dairy. After years of experimenting with different plant based proteins I settled on a few good substitutions for the animal products. Substitutions that are easily obtained in your local grocery store or on the internet. I have created a Cuban/Vegan fusion which maintains the integrity, and delicious flavors of the original recipes.
